We make these by cold-setting pectin jellies with juice we press from local berry growers, stone fruit orchards, and whatever citrus is in season. How we work

The 22-hour rule

We don't rush our jellies. Fruit comes in the morning, gets pressed and mixed with bloomed pectin and sugar. Then we wait. Eight hours sitting out at room temperature, followed by 14 hours in the cold at around 8°C—nothing frozen. That slow cooling is actually where the texture happens. You rush it and you get something grainy and chalky. But give it time and you end up with something smooth that actually feels nice when you eat it. That's just the cooling part though. After that comes demolding, drying, packing. We're making somewhere in the ballpark of 300 units daily across two lines. Not because the process is slow—because we won't skip steps. Real fruit juice tastes completely different when you're not cooking it into submission. Real colors stay bright when you're not forcing the set. It's one of those small decisions, building in the time, but it shifts everything that matters.
